It has a bunch of good articles about health, kitchen stuff, eating non-processed foods and lots of recipes. Tonight we tried out one of their recipes for pasta alfredo with shrimp &amp;amp; veggies. It was really good, and healthy too. I've added it to my rotation of recipes. I'll also be making one of the desserts this weekend for Thanksgiving, a layered lemon cream tart. I'll post about that after we try it.&lt;br /&gt;&lt;br /&gt;Here's the recipe for the &lt;b&gt;Alfredo Cream Sauce&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1 cup 2% milk&lt;br /&gt;2 1/2 tsp arrowroot (we didn't have any so we used tapioca instead, you can also use cornstarch)&lt;br /&gt;2/3 cup grated parmesan cheese&lt;br /&gt;3/4 cup low-fat plain yogurt&lt;br /&gt;1/4 tsp ground nutmeg&lt;br /&gt;salt &amp;amp; pepper to taste&lt;br /&gt;&lt;br /&gt;In a medium saucepan, whisk together milk &amp;amp; arrowroot. Place over medium heat and cook, stirring, until mixture comes to a simmer and thickens, about 5 minutes. Remove from heat and add cheese, whisking until melted. Whisk in yogurt, nutmeg, salt, pepper. Cover and set side. If necessary, re-warm over low heat before serving.&lt;br /&gt;&lt;br /&gt;This recipe was tasty, really easy, and fast to make. I prepped my veggies first, then started making the sauce. While I was making the sauce, I started to boil the water for pasta. By the time the water was boiling the sauce was done.Then I started sautéeing my veggies and shrimp and started the pasta. I went to McDonald's to get a Bacon 'n Egg McMuffin sandwich and a coffee (both my true McDonald's weaknesses). I actually tricked myself into thinking that sandwich wasn't so bad... I mean, it's just an egg, a bit of bacon, english muffin and 1 slice of (crappy) cheese. Turns out that sandwich is horrible (but delicious)!&lt;br /&gt;&lt;br /&gt;Here's the breakdown on the Bacon 'n Egg McMuffin sandwich:&lt;br /&gt;310 calories&lt;br /&gt;14g fat (5g saturated)&lt;br /&gt;30g carbs&lt;br /&gt;2g fibre&lt;br /&gt;2g sugar &lt;br /&gt;16g protein&lt;br /&gt;&lt;br /&gt;I think the only good thing in this is the protein.&lt;br /&gt;&lt;br /&gt;Otherwise the weekend has gone really well. I haven't pigged out, my choices have been decent. So for that I'm really happy.&lt;br /&gt;&lt;br /&gt;Today was the real showdown though. John just couldn't take it and wanted McDonald's for lunch. He wanted it bad. So, ya know, I encouraged him not to, but there's only so much I can do. I'm his wife, not his mom. So John had McDonald's and I had a big salad. I turned down McDonald's when I had a super easy out on it. I'm really proud of myself! AND it was a delicious salad. I've had this salad everyday this week. It's so damn good.&lt;br /&gt;&lt;br /&gt;Here's the recipe to my oh-so-delicious salad:&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Vinaigrette&lt;/b&gt; (this makes enough for a week's worth of salads)&lt;br /&gt;&lt;ul&gt;&lt;li&gt;1 small shallot finely chopped or minced&lt;/li&gt;&lt;li&gt;4 tbsp red wine vinegar&lt;/li&gt;&lt;li&gt;3 tsp dijon mustard&lt;/li&gt;&lt;/ul&gt;Mix those 3 ingredients together.&lt;br /&gt;Whisk in slowly:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;10 tbsp olive oil&lt;/li&gt;&lt;/ul&gt;&lt;b&gt;These are the veggies I put in my salad:&lt;/b&gt;&lt;br /&gt;Lettuce (d-uh)&lt;br /&gt;Grape tomatoes&lt;br /&gt;Cucumber&lt;br /&gt;Green beans (I use LOTS, so good... steam for 3 minutes, submerge in cold water, add to salad)&lt;br /&gt;Goat cheese (the secret delicious ingredient)&lt;br /&gt;&lt;br /&gt;Tomorrow is Saturday. The weekend. I really hope I can pull it off and make healthy food choices!&lt;br /&gt;&lt;br /&gt;*I had a take-out coffee every morning with sugar and cream. It was fun, the food was great, but when Monday morning weigh-in happened I had gained back 3 lbs that I had lost. So now I'm still at 169.&lt;br /&gt;&lt;br /&gt;On top of that, I'm having a hard time getting back into it. I'm back to drinking coffee with sugar/cream &amp; my lunch is whatever I can scrounge up. Dinner is still good, but I'm also back to snacking after Holden goes down. &lt;br /&gt;&lt;br /&gt;I really need to learn to keep my motivation UP and carry it through the weekend. The weekends really do me in. I have such a hard time turning down delicious treats :(&lt;br /&gt;&lt;br /&gt;Do you have any tricks for staying motivated? Especially when faced (literally) with a dessert offered to you, under your nose? I'm down 3.5 lbs!! OK, for the sake of full disclosure, I fibbed in my last post... I said I was 169 (which I thought I was) only to weigh myself and see it be 172.5 *ugh ugh ugh*. So now I'm 169 for real *ha*, and that's just in a bit over a week, by only watching what I eat, no exercise!&lt;br /&gt;&lt;br /&gt;Next step: get a swim membership. I think it's pretty much the only exercise I enjoy, not to mention it's no impact so good for my knees. I'll be buying myself a 6 month pass to Nepean Sportsplex, which is just down the street from us. It's so hard. I sabotage myself at every turn. It's a horrible feeling. I'm up to 169 pounds the heaviest I have ever ever been. I'm not chubby, I'm not plump, I'm &lt;i&gt;fat&lt;/i&gt;.&lt;br /&gt;&lt;br /&gt;John and I were eating pretty well for 3 days, then John thought we deserved a treat and bought me a chocolate bar. I can't resist once it's in my hands. I'm totally weak. I'm one of those people that needs to have zero temptation in the house for this to work for me. &lt;br /&gt;&lt;br /&gt;So I ate my chocolate bar. Now I'm back to feeling like crap, but today is a new day. Over the past 6 months to a year (give or take, I can't remember exactly) it has gotten really &lt;i&gt;really&lt;/i&gt; bad when I do exercise of any kind.&lt;br /&gt;&lt;br /&gt;Remember that post last week about how I went on a one hour walk with Jasmine? That was last Wednesday. My left knee has been in excruciating pain ever since. I coincidentally had my physical yesterday, and she believes it's some form of Patella Femoral Syndrome... which is kind of a catch phrase to say something is wrong with your knee! It could be anything! LOL. Anyway, she recommended I try physiotherapy. Since I'm not covered for physio, she recommended I look up some exercises online and if they don't end up working to then go to physio. So that's what I'll be doing.&lt;br /&gt;&lt;br /&gt;Here's the video I will be starting with. My exercise level has been pretty low. I took a nice brisk 1 hr walk yesterday with my friend Jasmine (and her yummaliscious daughter Sophie, she's so cute!), but other than that, not much at all.&lt;br /&gt;&lt;br /&gt;I've cut back on sweets quite a bit, and for that I'm pretty happy. We've also been doing a better job at meal planning, which helps us tenfold, we really need to keep doing this. When we meal plan, we eat healthier, we save money, and we don't waste food. It's so hard to break months, years, geez... a decade's worth of bad habits. I will eat for any reason. I don't even have to be hungry, and it's not usually a healthy choice.&lt;br /&gt;&lt;br /&gt;This past week I've made some steps in the right direction. I still have a long way to go, but I'm on the right track. I've cut out desserts almost completely. I used to have dessert every single night, and usually with lunch and dinner &lt;i&gt;(that's right, 2 per day)&lt;/i&gt;. I've only had dessert 2 times in the past 10 days. Huge improvement for me!! I've also been eating more vegetables and eating better sized portions. &lt;br /&gt;&lt;br /&gt;On top of that, I haven't started exercise. Today, I begin the Wii Active 30 day challenge. Weeee!&lt;br /&gt;&lt;br /&gt;So with those small changes, I've already lost 2 lbs. I'm down to 171 lbs. While everything I ate was healthy, I'm pretty sure it was too high in fat in calories. However, I'm still OK with this, since there was no sugar and no processed foods involved at all.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Breakfast&lt;/b&gt; was an egg with whwh toast and a bit of butter.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Lunch&lt;/b&gt; was leftover blackbean burrito (So good. Seriously. Try it! Recipe below!)&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Dinner&lt;/b&gt; was eggplant parmesan. I made this for the first time ever, and it was pretty good! I think there's too much cheese in it for it to be deemed totally healthy, and I think my serving was much too big.&lt;br /&gt;&lt;br /&gt;Eggplant parmesan is a very weird dish. You do everything you can to the eggplant to take out it's bitter taste and it ends up tasting like nothing. You sweat it (slice eggplant thinly, sprinkle sea salt on it and let it stand for 30 minutes, rinse, pat dry), then bread it, then bake it, then layer it with cheese and marinara sauce. It's delicious, but you can't really taste eggplant. It made me feel good and not quite so disgusting. I &lt;i&gt;hate&lt;/i&gt; that I feel disgusting. Thanks to everyone for the kind words and encouragement.&lt;br /&gt;&lt;br /&gt;I ended up going for an impromptu 20 minute power walk after dinner. I asked Holden if he wanted to go for a walk, he said he wanted to go to the park (as usual *ha*) so I took the long way, which is totally out of the way, but I got a tiny bit of exercise in, so that's good. &lt;br /&gt;&lt;br /&gt;Today's food was only OK.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Breakfast&lt;/b&gt; was 2 slice whwh toast with no-sugar added jam (although it's jam, so it's still sweet, so not really a great choice).&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Lunch&lt;/b&gt; was 2 hard boiled eggs, half of a sliced yellow pepper, and a few cucumber slices. Much better!!&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Dinner&lt;/b&gt; was a homemade blackbean burrito. It was fan-frickin'-tastic. I added more veggies (chopped tomato, more peppers), but I found it was too much cream cheese. Next time I'll cut it in half. John and Holden loved it too!! I served it with salsa.&lt;br /&gt;&lt;br /&gt;Here's the recipe:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;b style="background-color: white; color: #0b5394;"&gt;Blackbean Burritos &lt;/b&gt;&lt;/span&gt;&lt;br /&gt;&lt;div class="ingredients" style="margin-top: 10px;"&gt;&lt;div class="ingredients" style="margin-top: 10px;"&gt;&lt;h3&gt;&lt;span style="font-size: small;"&gt;Ingredients (serves 4)&lt;/span&gt;&lt;/h3&gt;&lt;ul&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     4 (10 inch) flour tortillas&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     1/4 cup vegetable oil ( I used waaaaaay less than this, maybe 1 tbsp)&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     1 small onion, chopped&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     1 red bell pepper, chopped&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     2 teaspoons minced garlic&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     2 (15 ounce) cans black beans, rinsed and drained (I used 1 large can for the 3 of us)&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     2 teaspoons minced jalapeno peppers (skipped this, added fajita seasoning instead)&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     6 ounces cream cheese (this was too much for the 3 of us)&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     1 teaspoon salt&lt;/span&gt;&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;&lt;span style="font-size: small;"&gt;                     1/4 cup chopped fresh cilantro&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;&lt;/div&gt;&lt;/div&gt;&lt;div style="border-top: 1px dotted rgb(204, 204, 204); margin-top: 20px; width: 300px;"&gt;&lt;/div&gt;&lt;div class="directions" style="margin-top: 10px;"&gt;&lt;h3&gt;&lt;span style="font-size: small;"&gt;             Directions&lt;/span&gt;&lt;/h3&gt;&lt;ol&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;&lt;span class="plaincharacterwrap break"&gt;                     Wrap tortillas in foil and place in oven heated to  350 degrees F (175 degrees C). Bake for 15 minutes or until heated  through.                 &lt;/span&gt;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;&lt;span class="plaincharacterwrap break"&gt;                     Heat oil in a 10-inch skillet over medium heat.  Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2  minutes stirring occasionally. Pour beans into skillet, cook 3 minutes  stirring.                 &lt;/span&gt;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;&lt;span class="plaincharacterwrap break"&gt;                     Cut cream cheese into cubes and add to skillet with  salt. Cook for 2 minutes stirring occasionally. Stir cilantro into  mixture.                 &lt;/span&gt;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size: small;"&gt;&lt;span class="plaincharacterwrap break"&gt;                     Spoon mixture evenly down center of warmed tortilla  and roll tortillas up. It's getting ridiculous. I'm officially at the heaviest I have ever been (except when pregnant). I am now a whopping 173 lbs. It's very depressing.&lt;br /&gt;&lt;br /&gt;Here's the vicious circle I got myself into:&lt;br /&gt;Eating refined sugar &lt;span style="font-style: italic;"&gt;(lots, daily)&lt;/span&gt;, energy crash, too lazy to get active, mood crash, which makes me crave &amp;amp; eat more sugar... lather rinse repeat.&lt;br /&gt;&lt;br /&gt;I've cut back on sugar big time in the last 2 days and it's made me realize something: &lt;span style="font-style: italic;"&gt;I am a sugar addict.&lt;/span&gt; I'm not saying that lightly. I quit smoking cold turkey about 4 yrs ago, and I feel the exact same way now as I did those first few weeks without nicotine. I want sugar all the time, I think about it a lot, I get jittery, being around it is stressful.&lt;br /&gt;&lt;br /&gt;So I need to treat it as an addiction.&lt;br /&gt;&lt;br /&gt;And this is going to sound crazy, but just 2 days with (much) less sugar, and I already feel better. I've eaten badly all week. Too busy with work, stress, didn't make a meal plan, etc etc... all adds up to eating out, and eating badly *sigh*&lt;br /&gt;&lt;br /&gt;At least I finally had time today to prepare a decent dinner for tonight (the first healthy meal for us in a week!!!). It makes you feel like shit but makes you want more at the same time. I seriously feel disgusting. Not just mentally with my actions, but physically just bloated, heavy groggy... just GROSS!!! I really overindulged during my vacation. I was doing really well until this past Friday, only eating the occasional treat. But once Friday rolled around, my mind went into freak out mode thinking "back to healthy eating on Monday!! Pig out now while you still can!!!" and that's what I did this weekend. We then went to the movies where I had a water and half of a small popcorn &lt;span style="font-style: italic;"&gt;(restraint!)&lt;/span&gt;. We had lunch at Moxie's, John and I split the 3 dip bread, and I had a side caesar salad with half  of a beef dip sandwich. No dessert! I am drawing a complete blank on what we had for dinner that night, I'll edit when it comes to me &lt;span style="font-style: italic;"&gt;(I know it wasn't junk though, I always remember the junk).&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Saturday was coffee for breakfast &lt;span style="font-style: italic;"&gt;(bad habit!)&lt;/span&gt;, then 1 small hamburger &amp;amp; 1 small hotdog at J&amp;amp;T's house who were having a BBQ. Dinner was at home, Shepard's Pie chock full of veggies. I hosted Kylie's baby shower &lt;span style="font-weight: bold;"&gt;(fun!)&lt;/span&gt; and ate 2 cupcakes, some garlic bread, and a couple of small sausage rolls. I made everyone take home what was left at the end of the night, I would have eaten it all on Sunday if they didn't!&lt;br /&gt;&lt;br /&gt;Sunday: my dad came over for brunch. 1 egg + BBQ steak + 1 slice toast. Dinner: leftover Shepard's Pie.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise:&lt;/span&gt;&lt;br /&gt;Swimming in J&amp;amp;T's pool on saturday (although it was just floating around, so don't think it counts!!). WHY?????)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Breakfast: Coffee (&lt;span style="font-style: italic;"&gt;sans&lt;/span&gt; sugar), 1 egg + 1 egg white, 4 slices tomato.&lt;br /&gt;&lt;br /&gt;Lunch: leftover salmon (only about 40g), leftover spinach &amp;amp; rice casserole &lt;span style="font-style: italic;"&gt;(for those interested in trying this recipe, it's not great reheated the next day, so just make enough for your meal. I'll be making a half recipe next time).&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Snack (not really a snack, but it was in between meals): Xtra large Timmy's coffee (double double)&lt;br /&gt;&lt;br /&gt;Dinner: Swiss chalet (chicken breast with skin, side caesar salad, side garden salad, 1/2 multigrain roll, a bit of dipping sauce. No fries!!).&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Total calories intake:&lt;/span&gt; 1,290 calories&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise:&lt;/span&gt; none. I was too frickin' hot and any excuse will do to not move. Well under my goal, but I wasn't really hungry for much else. I definitely should have snuck in a handful of almonds or something similar between breakfast and lunch.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise:&lt;/span&gt;&lt;br /&gt;1 hour in the pool with Theresa. We did lots of laps, but admittedly they were only moderate intensity, but we did continuously move for the whole hour!&lt;br /&gt;&lt;br /&gt;So I feel I did really well. Yippee!!&lt;br /&gt;&lt;br /&gt;By the way, the spinach and rice casserole was a huge hit with John, Holden &lt;span style="font-style: italic;"&gt;and&lt;/span&gt; myself. Here's the recipe if you're interested:&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;&lt;span style="font-weight: bold;"&gt;Spinach &amp;amp; Rice Casserole&lt;/span&gt;&lt;br /&gt;Makes 8 servings&lt;br /&gt;&lt;ul&gt;&lt;li&gt;                                     1 cup chopped onion&lt;/li&gt;&lt;li&gt;2 cloves minced garlic&lt;br /&gt;&lt;/li&gt;&lt;li&gt;                                     1 teaspoon olive or canola oil&lt;/li&gt;&lt;li&gt;                                     1 1/2 cups uncooked long grain rice&lt;/li&gt;&lt;li&gt;                                     4 cups reduced sodium chicken broth&lt;/li&gt;&lt;li&gt;                                     1 (10 ounce) package fresh spinach, torn&lt;/li&gt;&lt;li&gt;                                     1/2 teaspoon salt&lt;/li&gt;&lt;li&gt;                                     1/8 teaspoon pepper&lt;/li&gt;&lt;li&gt;                                     1/4 cup shredded Parmesan cheese&lt;/li&gt;&lt;/ul&gt;Directions:&lt;br /&gt;&lt;ol&gt;&lt;li&gt;&lt;span&gt; In a large saucepan, saute onion &amp;amp; garlic in oil until tender. They have really good coffee!). Here we go skipping breakie again!!!&lt;br /&gt;&lt;br /&gt;Lunch:&lt;br /&gt;Black bean &amp;amp; vegetable soup, 1 slice whwh bread with a bit of butter&lt;br /&gt;&lt;br /&gt;Dinner:&lt;br /&gt;Pesto with pasta (my serving was too big, but I was stressed and boy do I like to eat when I'm stressed!). I wanted to hide veggies for Holden, so I steamed half a bag of baby spinach, pureed it and mixed it in with the pesto. It was &lt;span style="font-style: italic;"&gt;great&lt;/span&gt;. Couldn't taste the spinach at all, and since Holden likes pesto, it was perfect. Added in some fresh peas and cherry tomatoes as well.&lt;br /&gt;&lt;br /&gt;Total calorie intake: 1,300&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise:&lt;/span&gt;&lt;br /&gt;Brisk 1 hr walk with John &amp;amp; Holden &lt;span style="font-style: italic;"&gt;*finally got out there and off my butt!!!*&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Tomorrow I'm planning on having one of the super clean days. My plan is to have 1 egg + 1 egg white for breakfast, some sliced tomatoes, and a glass of skim milk. Snack will be a homemade blueberry muffin. Lunch will be leftover black bean &amp;amp; veggie soup again, with a slice of bread, no butter. Raw veggies if I'm still hungry. Dinner: baked salmon; steamed green beans; spinach &amp;amp; rice casserole (healthy casserole). This will bring me to 1,120 calories for the day. It's a bit high in carbs, I may switch the muffin for a veggie or fruit snack. I'm also switching to artificial sweetener in my coffee. I like it too sweet to continue putting sugar in it. John is gonna be pissed. He hates that stuff. I can't give up the cream though. It always makes me want to eat more when I gain weight. And not the good stuff.  How stupid is that??? Lunch was leftover half serving of pasta shells stuffed with italian sausage, dinner was pesto pasta with tomatoes.&lt;br /&gt;&lt;br /&gt;It was a gorgeous day! Holden, John, and I played in the backyard all morning. We put out the baby pool for Holden, which he &lt;span style="font-style: italic;"&gt;loved&lt;/span&gt;. I mean, he was &lt;span style="font-style: italic;"&gt;ecstatic&lt;/span&gt;.&lt;br /&gt;&lt;br /&gt;All in all, a great day.&lt;br /&gt;&lt;br /&gt;So far today (Sunday) I've gone for a 1 hr walk this morning and eaten well. I didn't do a calorie count, but I think it turned out OK.&lt;br /&gt;&lt;br /&gt;Breakfast was just toast and coffee.&lt;br /&gt;Lunch was a small BLT sandwich.&lt;br /&gt;Dinner was a small portion of beef, corn &amp;amp; bean salad, rice &amp;amp; spinach salad, and a bit of mashed potatoes. There was chocolate cake for dessert, and that put me over the top, I'm sure. It was delicious and I didn't hold back, I had a huge piece!! BUT, I skipped on the wine.&lt;br /&gt;&lt;br /&gt;I gave Holden a bit of dessert, just a few bites, and he loved it. After I finished feeding him, I did some chores and the grandmothers (both my mom &amp;amp; John's mom were there) gave Holden &lt;span style="font-style: italic;"&gt;more&lt;/span&gt; desserts. I could have smacked them. So he didn't fall asleep until 8:30pm and woke up at a very dark 4:30am. Done. A bad start to the day. I got really wrapped up in work and neglected to eat.&lt;br /&gt;&lt;br /&gt;Lunch:&lt;br /&gt;Salad with lettuce, tomatoes, dressing, and a slice of whwh bread with butter.&lt;br /&gt;&lt;br /&gt;Dinner:&lt;br /&gt;1.5 servings of black bean casserole (love it!! lots of yummy veggies too).&lt;br /&gt;&lt;br /&gt;Snack: 1 cup cherries&lt;br /&gt;&lt;br /&gt;Total calorie intake: 1,060 calories&lt;br /&gt;&lt;br /&gt;Exercise: none. bla.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Problems:&lt;/span&gt;&lt;br /&gt;I really need to kick this habit of skipping meals. I'm ravenous by dinner time, and continuously want to snack after dinner. The days where I eat moderately throughout the day, I don't feel like snacking as much in the evening. And I'm in a better mood on days I eat well and consistently. Why do I do this to myself???? It was a great long weekend, and I didn't count calories. The worst of it was caving to chocolate and cheesies on Saturday night. Everything else was reasonable (food-wise). Although the wine on Sunday night was a little out of control (thank god for Monday being a holiday!!).&lt;br /&gt;&lt;br /&gt;I'm now fully back on and will be updating with my daily menu, calorie intake, exercise, etc.&lt;br /&gt;&lt;br /&gt;Big challenge of the week: my mother will be here from later today until Saturday. She eats well, not much junk, but she often likes a rich diet. I may have a small snack, I'll update if I do.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;ETA: I did have a small slice of toast with PB&amp;amp;J (all natural, sugar free) with a glass of milk, bringing me to a total of 1,555 calories.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Problems:&lt;/span&gt;&lt;br /&gt;I need to snack between meals, or at least between lunch and dinner. I find myself starving by the time dinner rolls around, which then makes me want to devour everything in site. I wanted another pork chop. Luckily we didn't have another one, otherwise I would have caved!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise:&lt;/span&gt;&lt;br /&gt;None!! *argh* I find it harder to get motivated to exercise than to cut calories. My mom came to visit for the weekend, and John's mom came for dinner Saturday night. We planned a nice meal and I had allotted all my calories, but I couldn't resist the delicious mashed potatoes (with butter and whole milk to boot), and the extra wine (4 glasses total!!). I ended up at 2,200 calories on Saturday!!!&lt;br /&gt;&lt;br /&gt;Here's the meal that put me over the top, cooked by my fabulous chef-at-home husband, John:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;beef ribs braised in wine, beef stock, and lots of veggies&lt;/li&gt;&lt;li&gt;fresh corn salad with tomatoes, green onions &amp;amp; olive oil&lt;/li&gt;&lt;li&gt;baked asparagus&lt;/li&gt;&lt;li&gt;garlic mashed potatoes&lt;/li&gt;&lt;li&gt;lots of wine&lt;/li&gt;&lt;li&gt;... at least we skipped dessert!!&lt;/li&gt;&lt;/ul&gt;Sunday we all went to Cora's for breakfast. I don't know why I keep going there, it's really not worth it. Although it's kid-friendly so it works for Holden. The mothers left and John and I had a nice dinner on our new patio after Holden went to sleep. Guess what. We had wine. We split a bottle of red and finished it. I'm such a cheap drunk, I was really feeling it. My mom &amp;amp; John's mom are coming over and we're making them a really nice dinner. Braised short ribs with corn salad, baked asparagus, and garlic mashed potatoes (I'm skipping the potatoes). There will be wine as well!&lt;br /&gt;&lt;br /&gt;Even though I'll be over in calories (it'll be about 2,200 at the end of the day) I still feel what I'm eating is healthy, so I'm not beating myself up over it.&lt;br /&gt;&lt;br /&gt;In case you're curious, it's the beef ribs that are throwing me way off track. 1 lb is 1,000 calories. I'm not sure if that calculation of weight includes the bones. If it does not include the bones and just assumes the meat, then I may be on target afterall. Looks like my original goal of 1,800 was too high. I should be aiming for between 1,300 and 1,650, so I guess I was right in my previous post about 1,800 seeming too high!&lt;br /&gt;&lt;br /&gt;&lt;/li&gt;&lt;li&gt;I am so sick of this RAIN!!!!!! Had something healthy to eat then did my Wii Active. I'm quite impressed with the Active so far, I'm really sweating by the end of it!&lt;br /&gt;&lt;br /&gt;I made some blueberry muffins this evening that are delicious and healthy. Here's the recipe:&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;Healthy blueberry muffins:&lt;br /&gt;&lt;br /&gt;Makes 12&lt;br /&gt;143 calories, 2.4g fat, 27g carbs, 2g fiber, 4g protein&lt;br /&gt;&lt;br /&gt;3/4 cup all-purpose flour&lt;br /&gt;3/4 cup whole wheat flour&lt;br /&gt;1/2 cup lightly packed brown sugar (I may try substituting applesauce next time)&lt;br /&gt;1/4 cup oat bran&lt;br /&gt;1/4 cup quick cooking oats&lt;br /&gt;1/4 cup wheat germ (can substitute whole wheat flour)&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1 cup blueberries&lt;br /&gt;1 banana, mashed&lt;br /&gt;1 cup low fat buttermilk&lt;br /&gt;1 egg&lt;br /&gt;1 tablespoon vegetable oil&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;&lt;br /&gt;1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups.&lt;br /&gt;&lt;br /&gt;2. In a large bowl, stir together the all-purpose flour, whole wheat flour, sugar, oat bran, quick-cooking oats, wheat germ, baking powder, baking soda and salt. Gently stir in the blueberries. In a separate bowl, mix together the mashed banana, buttermilk, egg, oil and vanilla. Pour the wet ingredients into the dry, and mix just until blended. Spoon into muffin cups, filling all the way to the top.&lt;br /&gt;&lt;br /&gt;3. Bake for 15 to 18 minutes in the preheated oven, or until the tops of the muffins spring back when lightly touched.&lt;/blockquote&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Here's what I ate today:&lt;/span&gt;&lt;br /&gt;Water intake: 5 glasses (better)&lt;br /&gt;&lt;br /&gt;Breakfast: Tim Horton's Xtra large coffee *ugh*&lt;br /&gt;&lt;br /&gt;Lunch: 45g pasta, 2 tbsp pesto, 1 cup cherry tomatoes, 10 spears asparagus, 1/2 large orange, 1 glass milk&lt;br /&gt;&lt;br /&gt;Snack: 1 slice whwh bread, 1 tsp butter&lt;br /&gt;&lt;br /&gt;Dinner: 1 chorizo sausage, 1 hard boiled egg, salad (lettuce, 1/2 tomato, cucumber, corn from 1 corn on the cob, 1/3 cup croutons, 1.5 tbsp dressing)&lt;br /&gt;&lt;br /&gt;Desert: 1 homemade blueberry muffin, 1 glass of milk&lt;br /&gt;&lt;br /&gt;Total calorie intake: 1,634, under target, but still acceptable. &lt;span style="font-style: italic;"&gt;&lt;br /&gt;I'm starting to think 1,650 calories is where I'm comfortable when eating healthy. I feel like I'm eating too much when I go over that (not in a psychological way, but in a full tummy way!)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise for the day: &lt;/span&gt;&lt;br /&gt;25 minutes of Wii Active (165 calories burned)&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Problems:&lt;/span&gt;&lt;br /&gt;Skipped breakfast, caved and got TM coffee. On a positive note, usually when I fall off the wagon, I use it as an excuse to eat like crap for the rest of the day. We were out of coffee cream at home so I caved and got Tim Hortons coffee (a weakness of mine), which is way higher in fat and calories than the coffee I make.&lt;br /&gt;&lt;br /&gt;Problem: I have a tendency to go for the quick, pre-packaged/take-out fix when we're out of what we need at home. My muscles are sore from the last 2 days, so I think the rest was good.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Problems: &lt;/span&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Water intake still too low. &lt;/li&gt;&lt;li&gt;I should have at least gone for a walk. &lt;/li&gt;&lt;li&gt;I feel like I'm eating too many carbs, especially today. I measured out the serving amount on the package of the pasta for dinner, and it ended up being way too much (over a cup). I ate it anyway, justifying that I had room on my calorie goal for the day. Dumb. &lt;/li&gt;&lt;li&gt;I'm not snacking, which I need to do (healthy stuff, of course). I think if I snack on fruits or raw veggies it will cut my carbs down but boost my calories a bit, so the numbers will even out.&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;On a side note, my baby sling turned out GREAT! Holden had to unexpectedly stay home from daycare, so I had to switch up my planned routine. Had an early breakfast, then went out with Jasmine and ate at Cora's for brunch. Went to my friend Theresa's house and swam in her pool for an hour, which was fun and awesome. Cora's does not have healthy options, I now realize. So I ate half of it. It was super large. I stopped before getting full, and skipped the potatoes alltogether. I added what I ate as accurately as I thought in FitDay, but I may try to be a 200 hundred calories under my goal at the end of the day since I'm sure everything they cook is loaded with oil or butter.&lt;br /&gt;&lt;br /&gt;* &lt;span style="font-style: italic;"&gt;fabric shopping:&lt;/span&gt; Jasmine and I are sewing baby slings tomorrow at an event with our mommy group (although this is a mommy only, no babies allowed event). My daycare provider contacted me late last night and told me she needs to take a personal day. I originally had plans to do Wii Active after he left for daycare, then go to my friend Theresa's house around 2pm to do some exercise before picking up Holden from daycare at 3:30 &lt;span style="font-style: italic;"&gt;(sounds like a nice day, right??? I know this feeling often wanes (hence being 163 lbs!!), but for now I'll take it and roll with it!! I've gotten lots of encouragement already and have 10 official followers! Thanks everyone :)&lt;br /&gt;&lt;br /&gt;My goal is to eat apx 1800 calories per day and exercise to burn apx 150 calories per day, which should technically put me at losing 1.5 lb a week.&lt;br /&gt;&lt;br /&gt;Are you curious about how many calories you need to eat per day to maintain your weight, or lose weight? You need to know your &lt;a href="http://en.wikipedia.org/wiki/Basal_metabolic_rate"&gt;BMR (Basal metabolic rate)&lt;/a&gt;. Here's a &lt;a href="http://www.bmi-calculator.net/bmr-calculator/"&gt;link&lt;/a&gt; to an easy calculator to figure it out. Don't forget to click "Daily Calorie Needs" to complete the process!&lt;br /&gt;&lt;br /&gt;My BMR is 2317 calories per day to &lt;span style="font-style: italic;"&gt;maintain&lt;/span&gt;, so cutting 500 calories per day brings me to 1817 calories to &lt;span style="font-style: italic;"&gt;lose&lt;/span&gt; 1 lb a week.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Here's what I ate today:&lt;/span&gt;&lt;br /&gt;Water intake: 7 glasses&lt;br /&gt;&lt;br /&gt;Breakfast: 1 egg, 1 slice whwh toast, 1 tsp butter, 1 glass milk&lt;br /&gt;&lt;br /&gt;Snack: 1 peach&lt;br /&gt;&lt;br /&gt;Lunch: 1 hot dog with mustard (not the best choice, but planned for), large salad with 1/4 avocado, 1/2 tomato, 4 slices cucumber, 1.5 tbsp dressing.&lt;br /&gt;&lt;br /&gt;Snack: 1/4 cup almonds&lt;br /&gt;&lt;br /&gt;Dinner: 1/3 lb ribeye steak, baked asparagus tossed lightly with canola oil, steamed cauliflower, green beans &amp;amp; carrots. .5 tsp light soya sauce. 1 cup cherries.&lt;br /&gt;&lt;br /&gt;Snack: 1 bag Orville Redenbachers Smart Pop popcorn&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;ETA: I ended up eating only 2/3 of the bag of popcorn, so I ended up on target with my calories afterall!!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Total calorie intake for the day: 1,881 (64 calories over)&lt;br /&gt;&lt;span style="font-style: italic;"&gt;ETA: 1750 with popcorn change.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Exercise for the day:&lt;/span&gt;&lt;br /&gt;Morning: 25 minute workout with Wii Active (burned 133 calories). I also bought Active for the Wii. I've heard great things, so hopefully I'll enjoy it, or at the very least endure it.&lt;br /&gt;&lt;br /&gt;I've prepared for this challenge by starting up a FitDay account where I can login what I've eaten and what exercise I've done for the day and it does all these neat calculations. It's got a bunch of other extra info you can enter, but I prefer to do that on this blog (moods, challenges, etc). I'll use FitDay strictly for tracking numbers. A lot. Of bad stuff.&lt;br /&gt;LOL&lt;br /&gt;Pretty much the exact opposite of leading a healthy lifestyle!&lt;br /&gt;&lt;br /&gt;My goal is to exercise moderately everyday to start, and build up the intensity as my body permits. Right now, I'm a bit of a mess. My lower back is often in pain, I regularly have really bad knee pain, hip joints pain... it really is unacceptable. I'm sure much of this is from the weight gain (back pain may be from having a baby though, it's new since having Holden).&lt;br /&gt;&lt;br /&gt;That being said, there are still plenty of exercises available to me.
